Veggies From Market To Table

Lots of greens from the Mar Vista Farmers Market!
I used the Kale on left.
I started with sauteing Shishito Peppers from Mitsuwa in olive oil + garlic.
While that was cooking, I washed, scrubbed and chopped the beets.

Beets cut into pieces, TJ olive oil spray on roasting tray.
Roasted in toaster oven (regular oven is broken) on 450.

Next prepped Kale:
Kale -- rinsed, stems and large ribs removed, somewhat chopped
Peppers done, used same pan (with existing oil + garlic bits).
Sauteed covered until cooked.
Beets, done.
YUM!
Sorry, no cooking times on any of this.
From the time stamps on the photos, it took about an hour total from washing the veggies to eating them.

Cheesy Grits Recipe

I adore the Cheesy Grits at Threadgill's in Austin TX.
I was delighted to discover that I had the recipe in Jane and Michael Stern's Blue Plate Specials & Blue Ribbon Chefs
The original recipe:

My revised stove top version:

Cheesy Grits
ingredients
• 1-3 cloves garlic, minced
• med onion chopped
• olive oil
• 4 c stock (I use 2 cans chicken)
• salt
• 1 c grits or polenta
• 1 c cheese, grated (I use extra sharp cheddar)

Saute garlic + onions in oil in large saucepan
When soft, add water + a bit of salt
Bring to boil
Add Grits
Simmer for 5-10 minutes until grits are cooked
Add cheese, blend
Let sit for a couple of minutes before serving
Yum!

Lentil Soup Recipe

I've been cooking up a storm of late. Here's a great lentil soup that's perfect for this cold time of the year.
I got the original recipe from Epicurious, and have been gradually modifying it ever since I downloaded it in 08.

Lentil Soup
makes about 12 cups

ingredients
• olive oil
• 3 garlic cloves, minced
• 1 med onion, chopped
• 2 med carrots, 1/8" slices
• 2 celery ribs, chopped [I don't add because I don't like celery]
• 3 - 4 small boiling potatoes, 1/2" dice
• 2 bay leaves
• 1 tsp rosemary
• 1/2tsp thyme
• 1/2 tsp ground sage

• 8 c stock
• 16 oz lentils

• 1/4 c basalmic vinegar
garnish

• splash of olive oil
• fresh parsley, chopped fresh [not in photo -- didn't have]
• grated parmesan

Saute the first set of ingredients in a large saucepan until onion is soft
Add stock and lentils
Let come to a boil
Simmer for 20-45 min
NOTE: can add other veggies in a timely manner (so they don't turn to mush). Next time I'm including frozen spinach.
After lentils are cooked, remove from heat and add vinegar
Serve and add garnish
