Delicious Breaded Fish

Tim and Lisa, my pals in Portland, have served this a couple of times when I've visited. Their recipe comes from a magazine (not sure which). I wasn't totally happy with the breading, and found something better from NY Times Cooking.
The aioli is addictive - make a double batch! Great for Tuna Salad!

Fish
  • 1-1/2 lbs mild fish fillets (sole, swai, tilapia, halibut, etc)

Chile Cilantro Aioli recipe from Tim
better if made in advance to let flavors blend
  • 3tb mayo
  • 1/2 serrano chile, cored and deseeded, minced
  • 2 cloves garlic, minced
  • handful cilantro, minced
  • 1 egg
  • Salt and freshly ground pepper to taste
  • 3 tablespoons water [or milk]
  • 1 tablespoon vegetable oil
  • ½ cup flour
  • 3 cups fresh bread crumbs or panko
1) Beat the egg, salt, pepper, water and oil in a flat dish.

2) Put the flour in a flat dish and toss the fillets in it. Shake off excess.

3) Put bread crumbs in a flat dish.

4) Dip the floured fillets, one at a time, in the egg mixture to coat well. Dip them on both sides in the bread crumbs and pat lightly to make the crumbs adhere.

5) Fry the fillets in butter or olive oil until golden brown and cooked

Serve with lemon wedges

Meatless Lasagne

This recipe more or less comes from the Barilla Oven-Ready Lasagne Noodles box.
My proportions are low on noodles, dense with cheese for a 9 x 9" or 9 x 12" baking dish.
I have found that the noodles don't totally soften up during the initial baking and I've been experimenting with pre-soaking them in sauce.
[1st revision 2/25/2022 replaced mozzerella with fontina]
[3/31/22, manchego was the replacement]

Meatless Lasagne

6 servings
Preheat oven to 375º

INGREDIENTS
  • 4-6 "ready to bake" noodles (Barilla noodles are flat and 3.5 x 6.5")
  • 24 oz jar Spaghetti Sauce (we like Rao's Roasted Garlic)
  • 2 eggs, beaten
  • 15-16 oz ricotta or requeson
  • 2 cups grated mozzerella OR monterey jack OR 8 slices of Fontina
  • 1/2 cup grated parmesan for top
METHOD
  1. Lay noodles on a cookie sheet and spread some sauce (or water) over to moisten
  2. Let sit for a while (optimum time TBD)
  3. Beat eggs in a large bowl
  4. Add cheeses, mix thoroughly (if your cheese is sliced, leave for later)
  5. Spray or spread olive oil on baking dish
  6. Add some sauce
  7. Make a noodle layer
  8. Add a layer of 1/2 the egg/cheese mixture
  9. Add a layer of sliced cheese, if that's what you're using
  10. Make another cheese layer
  11. Make another noodle layer
  12. Make another sauce layer
  13. Make another fontina layer on top (see step 9)
  14. Sprinkle top with parmesan
  15. Bake for 25-30 minutes (cover with foil if needed)
  16. Let rest 15 min before serving

Kimchi Tuna Noodles

My take on a NY Times recipe.

Kimchi Tuna Noodles

serves 2

INGREDIENTS

  • 1 cup cabbage kimchi, including juice
  • 1 package udon noodles
  • 1 tablespoon unseasoned rice wine vinegar, plus more to taste (or lemon or lime juice or fish sauce)
  • 2 tablespoons toasted sesame oil, plus more to taste
  • 1 5oz can tuna, drained
  • 1/2 c chopped onion
  • 1 inch piece fresh ginger, peeled and thinly sliced into less than 1/4-inch-thick matchsticks
  • 1/2 c chopped cilantro
  •  Red-pepper flakes, gochugaru or sambal oelek (optional)
  • 1 tablespoon toasted sesame seeds or furikake (optional)

PREPARATION

  1. Place a colander over a medium bowl and drain the kimchi.
  2. Boil water, cook udon.
  3. Coarsely chop the kimchi.
  4. To bowl with the kimchi juice, add the rice wine vinegar and sesame oil; stir to combine.
  5. Stir in the tuna, breaking up the tuna into large chunks.
  6. Add the rest of the ingredients, and stir to combine. Because each batch of kimchi tastes different, it’s important to taste and adjust seasonings. If it needs more tang, add more rice wine vinegar. If it’s too intense, add more oil or even mayonnaise. If you want it spicier, add red-pepper flakes, gochugaru or sambal.
  7. Serve room temp or cold with a sprinkle of sesame seeds, if desired.
It keeps in the refrigerator for up to 3 days, if it lasts that long.

EggSlut and "The Slut" Recipe

Last weekend, Severo and I made a trek to EggSlut Venice for takeaway breakfast.

Yum!
Behold "The Slut"
This morning, I decided to replicate it.

Success!

The recipe:

EggSlut Slut
makes 1 serving

Ingredients

  • 1/2 c mashed potatoes
  • 1 egg
  • butter (I used 1/2 tsp)
  • chopped chives (I used Egyptian Walking Onion)
Method

  1. Get a tempered* jar with tight-fitting lid (at least 8 oz size)
  2. Before adding ingredients, measure for water level in saucepan. Put the empty jar in the pan. Add water to cover. You want the jar completely covered.
  3. Remove jar from pan, heat water to boil
  4. Spray inside of jar with Pam (cleanup will be easier)
  5. In jar, add ingredients in order listed (start with potatoes on bottom)
  6. Cover jar with lid, place in boiling water
I cooked mine for 7 minutes for a runny yolk.
Time may differ, depending upon size of jar and desired consistency of egg.

Season with salt and pepper to taste.
Narrow slices of toasted baguette a nice garnish.

*An 8oz canning jar is perfect. DO NOT use "any old jar". I tried.
The jar broke when I put it in the boiling water bath. Sad face.

  • 1 tb honey
  • 1 tsp dijon mustard
  • 1-3 garlic cloves, thinly sliced
  • 1 tsp salt
  • 2/3 canola oil
  • 1/4c cilantro leaves (I use 1c)

method
  1. Blend first set of ingredients,
  2. Add oil slowly so it emulsifies,
  3. Add cilantro last, blend more.
  4. Store in jar in fridge.

My Most Easy Recipe

I call it the Hong Kong Scramble.

First, the backstory...
Dec 2003-Jan 2004. I was visiting Lisa in Hong Kong. She had a Nike Design HK contract job, staying at a long-term hotel with a double bed. She was lonely, and had a large meal stipend. All I had to pay for was my flight and any additional shopping (all, she says, haha).
The room came equipped with a microwave and mini-fridge. We usually had dinner leftovers.

Lisa went to work fairly early and I loved waking up slowly, sipping TenRen Tung-ting Oolong tea and looking out the window at the fabulous view.
I would make a super simple breakfast adding an egg to the leftovers. Indian Curries were especially accepting to this method.

Hong Kong Scramble

  1. Put stewy leftovers in a bowl (curries, rajas, mash potatoes, creamed spinach, etc).
  2. Stir in an egg or two.
  3. Cook in microwave for 1 minute.
  4. Remove, stir again.
  5. Cook for another 30 seconds+ (as needed)
  6. Enjoy!
Here's a Hong Kong traffic movie to watch while you eat your scramble:

Mushroom Bread Pudding

I first found the concept for this recipe from Susan Spungen in the NY Times Cooking website, as a suggested side dish for Thanksgiving. I wasn't totally pleased with the results and searched for another version. Which I found. But I have no record of where I found it! Here it is on Chowhound! Thank you Google Chrome!

It's pretty much an exact copy of the Chowhound recipe, with a few minor tweaks.

I've Got the Beet (Greens)

Severo brought home FIVE pounds of beet greens from his day job (produce clerk at a local independent market).
FIVE POUNDS!
They almost filled a brown bag.
What did I do with them?

The Google gave me this recipe from the NY Times: Sauteed Beet Greens with Garlic and Olive Oil
One pound of greens, before and after blanching
I pretty much followed the recipe, so click on the link to get it.
Blanching instructions are in the second recipe below.
Blanching / draining directly over the stock pot to capture all the nutritious beet water.
(I freeze for later to use as veggie stock for beans and soups).

Sauteeing: before / after
Deployed as a spinach substitute for Eggs Florentine
The Hollandaise and Bacon totally erased any healthy aspects of this breakfast.
It was DELICIOUS!
The blanched beet greens DO have a very spinachy flavor. I next thought of Creamed Spinach.
I was surprised to discover nary a recipe in my cookbook collection. Back to The Google:
Morton's Steakhouse Creamed Spinach (Copycat) by Dinner then Dessert
I made some minor caloric reductions and reconfigured the amounts for four servings (vs eight).

Creamed Greens
serves 4
221 calories per serving

INGREDIENTS
  • 1 pound fresh greens, blanched
  • 2 tablespoons unsalted butter
  • 1/2 medium yellow onion minced
  • 3 cloves garlic minced
  • 1/4 teaspoon freshly grated nutmeg [didn't use]
  • 2 TB all-purpose flour 1 3/4 cups half-and-half
  • 2 TB grated Parmesan cheese

INSTRUCTIONS
Blanching:

  • Bring a large pot of water to a boil.
  • Add the greens and cook just until wilted, about 2 minutes.
  • Drain in a strainer or colander.
  • Chop the blob of greens into a 3/4 inch widths.

Making the creamy part:

  • In a large skillet melt the butter with the garlic and onions.
  • Cook on medium low for 8-10 minutes or until the onions are translucent.
  • Add in the nutmeg. [didn't]
  • Add in the flour and mix with a wooden spoon over low and cook for 2-3 minutes until the aroma is a bit nutty.
  • Add the half an half and cook until boiling.
  • Low boil for 6-8 minutes or until the mixture has thickened.
  • Add in the greens and the Parmesan cheese and stir to combine.

Enjoy!

I still have three pounds to deal with. Thinking of blanching and freezing it all.
